Healthy Recipe: Chocolate Bicycles

Chocolate Bicycles
Here's a great and healthy recipe for hungry toddlers and grownups too!

Recently, a friend of mine gave me a popsicle mold - for making and freezing our own popsicles. I knew just what I'd do with it when we got it. I made super-healthy, great tasting fudge pops for my two year old. I'm sure I told her that she could have a chocolate popsicle, but later, she told me she was eating a "tasty chocolate bicycle."

Here's the recipe:
3/4 c. coconut milk
2 T. unsweetened cocoa powder
1/4 t. cinnamon
1-2 T. agave nectar (to taste) - or whatever sweetener you like best

Combine these ingredients in a saucepan, over low heat - just until mixed. Then pour into popsicle molds and freeze.

What makes this recipe healthy?
  1. Coconut Milk - Contains medium-chain fatty acids that are easily matabolized and used by the body. Also, the fat in coconut milk is over 50% lauric acid. Lauric acid is the component found in human breast milk that protects infants from certain illnesses. This nutritional benefit is unique to coconut milk and is not found in other foods.
  2. Cocoa - High in Iron.
  3. Cinnamon - Cinnamon is a great source of manganese, fiber, iron, and calcium. It has also been shown to have a regulatory effect on blood sugar.
  4. Agave Nectar - Agave nectar is sweeter than sugar, the glycemic index is much lower than sugar and it is all natural, from fruit and has no funny "fake sugar" aftertaste.

do you think it would still taste the same if made with regular milk... for those of us allergic to coconut?

Mmm that sounds so yummy. I'm going to have to get some molds so I can try it. I love using coconut milk in things! My friend gave me an awesome recipe for Thai Coconut Milk Soup, YUM!

kelly - you could try using regular milk. make sure it is whole milk - you'll want the creaminess.

Yum! I make a similar one for my daughter blending bananas, coconut milk, and carob powder. Bananas are sweet, so there is no need to add any other sweetener! And she does not react well to chocolate, so we stick to carob, which is also very healthy! For ppl allergic to coconut you could use regular milk, but it will be more "icy" than "creamy" because coconut milk has more fat. You could try using cashews blended in water as well, for cashew milk. I love making "icecream" out of a base of cashews!!
